Clam Chowder

Clam Chowder
8 servings

1/4 pound bacon, chopped
2 cups finely chopped onion
2 cups raw potatoes, cut into bite size pieces
2 carrots, shredded
2 cups water
5 6-ounce cans minced clams
4 cups milk
1 cup cream
2 tablespoons butter
3/4 cup flour
1 teaspoon salt
1 teaspoon thyme
freshly ground pepper to taste

Saute bacon and onion.  Add potatoes, thyme and water.  Cook about 15 minutes or until potatoes are almost tender.  Add flour, remaining ingredients and simmer about 15 to 20 minutes.

Reheat slowly.
